Freezing Summer Berries

Frozen RasberriesIt’s best to buy fresh, organic, local, and in-season fruits and veggies for optimal nutrition. In-season produce also tends to be cheaper than when it is out of season. Now is the time to buy summer berries and preserve them for later.

I bought a half flat of organic raspberries at Costco the other day (very well priced I might add!) for the purpose of freezing for later use. First I washed the berries in a colander and then spread them out on a cookie sheet in a single layer to let dry. Once the raspberries were dry enough, I put them in the freezer on the cookie sheets and left them to freeze overnight. My raspberries were then transferred to and stored in freezer baggies. This method helps the berries from sticking together in a big clump. Don’t forget to label and date them!

I’ve also done this with blueberries with success. I especially like using my frozen berries for smoothies!
